Maybe you have heard the quote "Muffins are nothing but breakfast cupcakes." Well these are the exception to the rule. Rich with flavors of banana and dates, these healthy muffins are naturally sweet without any refined sugar added; the healthy ingredients sweetens them the perfect amount! They're the perfect breakfast to prepare on a Sunday night that will last you all week, like a warm, soft banana oatmeal cup on-the-go. Best of all, these are the first muffins you won't feel guilty after eating- in fact, I felt quite healthy polishing off the bash!
This recipe is ideal for busy people who want a healthy breakfast on-the-go, especially who love banana bread (but don't love the carbs.) Kid friendly, too!
Makes 8 Muffins. Cooking Time: 30 min.
Ingredients
2 Ripe Bananas, mashed
6 dates, pitted
1/2 Whole Wheat Oats
1/2 cup All-purpose flour
1 teaspoon baking powder
1 tablespoon Agave Nectar (can be substituted with honey)
1 teaspoon vanilla extract
1/2 tsp coconut oil
1 pinch salt
Optional: Walnut, peanut-butter, raisins or almond butter.
Directions
1. Preheat oven to 350 degrees. In the mean while, pit dates and blend until smooth.
2. Mash bananas with spoon.
3. In a bowl, combine bananas, dates, flour, baking powder, agave nectar, vanilla and coconut oil.
4. Place baking cups into a muffin tin and pour batter.
5. Bake for 20 minutes.
I was looking for a sugar-free recipe for my father. He is a diabetic patient. I hope to do this.
ReplyDeleteGreat! To eliminate more sugar, just take out the agave and lessen the amount of dates- the banana and oats will still provide enough sweetness! Hope he enjoys!
